Gingerbread men!! YUM!

Back in the kitchen again today for some ‘slow-baking’ fun. My mum made these with me and now I’m doing the same with my children. It’s a really quick recipe and the children love them, especially decorating the biscuits with currant eyes and currant buttons! My one tip would be to let the children choose their cutters whilst you do battle with the golden syrup!!  It’s a slippery little devil. Get your hands in I say!!! Good luck!!

4oz marg

4oz granulated sugar

9oz plain flour

1/2 tsp bicarbonate of soda

1 to 2 tsps of ginger (dried)

3-4 tbls golden syrup

Cream the fat and the sugar until soft. Work in the dry ingredients and then mix with syrup to make into a dough. Kneed briefly and roll out onto floured board. Cut out figures and then place on grease proof paper. Add currants to decorate. Bake in the oven at 180 degrees for around 10 minutes. EAT!!!!!
