We’re going to start looking like muffins if we’re not careful. We’ve been partaking in the making and munching of several dozen recently. We are particularly partial to the Hummingbird bakery kind and can highly recommend the ham and mushroom ones and the spinach and cheese. Oh and the carrot and courgette ones. Oh and definitely the chocolate ones. The ultimate though has to be their classic blueberry, TO DIE FOR!!!

360g plain flour
370g caster sugar
1 tsp salt
1 1/2 tsps baking powder
0.5 bicarbonate of soda
1/2 tsp vanilla extract
70g unsalted butter
Oven 170 degrees C. Mix flour, sugar, salt, baking powder, bicarbonate. Separately mix buttermilk, egg and vanilla extract. Pour this into flour mixture, then pour in the melted butter and beat the mixture until smooth. Fold in the blueberries and then spoon the mixture into muffin cases. Makes 12. Cook for 20-25 mins. YUM YUM!
